Real Simple's Mushroom Potpie sounds like a winner. Packed with veggies and using ready-made puff pastry as a crust, this recipe ought to be delicious. Plus, it's vegetarian but is still hearty. I think I'll sub butter lettuce for romaine, since it's been looking better at the store than the romaine.
Sadly, it was a let down. I didn't think the pie pilling as all that great. If I were to make it again, I would definitely use butter instead of oil--I think it would have helped. But honestly, I probably won't make this again. It was that off-putting.
